Antipasto Skewers with Creamy Artichoke Dip

SERVES: 8 • TOTAL TIME: 20 MINUTES

Ingredients:

For the Artichoke Dip:

  • 300g cream cheese

  • 280g artichoke hearts, drained and roughly chopped

  • Juice of ½ lemon

  • ¼ tsp salt

  • ¼ tsp white pepper

  • ¼ tsp smoked paprika


For the Antipasto Skewers:

  • Cherry tomatoes

  • Pitted green olives

  • Mozzarella balls

  • Shaved salami

  • Shaved prosciutto

  • Cucumber

  • Baby spinach leaves

Directions:

  1. Add all dip ingredients to a food processor and process for 2 minutes or until the dip is smooth and creamy. Spoon dip into a serving bowl and refrigerate while you prepare the skewers.

  2. Thread antipasto ingredients onto skewers and arrange into a circle on a serving plate, leaving room in the centre for the dip.
