Baked Brie with Honey, Rosemary & Walnuts

SERVES: 4 • TOTAL TIME: 20 MINUTES

Ingredients:

  • 1 wheel of Brie

  • ¼ cup honey

  • ½ cup walnuts

  • Fresh rosemary leaves removed from 1 sprig

  • Pinch of sea salt

Directions:

  1. Preheat oven to 180°C.

  2. Place a sheet of baking paper into a baking dish and place brie on top. Score top of brie by making parallel cuts across the top rind (cutting just through rind), then turn the brie 90 degrees and make cuts perpendicular to your first set of cuts.

  3. Place brie into the oven and bake for 10-15 minutes, until it has softened but hasn't completely melted.

  4. While brie is in the oven, toast the walnuts by placing them in a small frying pan over a medium heat, stirring occasionally, for 4-5 minutes, until the nuts are fragrant and toasted.

  5. Remove walnuts and chop then place in a small bowl and combine well with honey and rosemary leaves.

  6. Once the Brie has been removed from the oven, pour over the honey mixture and sprinkle with sea salt.

  7. Serve immediately with crusty bread or crackers and fruit (our favourites: figs or peaches).
