
Baked Mortadella Pappardelle with Three Cheeses
SERVES: 4 • TOTAL TIME: 40 MINUTES
Ingredients:
350g pappardelle
Pinch of salt
200g pepper mortadella
50g Jarlsberg cheese, roughly chopped
50g Grana Padano, roughly chopped
¾ cup cream
50g Parmesan, grated
½ tsp salt
¼ tsp nutmeg
Directions:
Preheat oven to 200ºC.
Fill a large saucepan with water and a pinch of salt. Bring to the boil over high heat.
Add pappardelle to the water when it is boiling and cook until the pasta is a very firm al dente. Drain and set aside.
Chop mortadella and add to a large bowl with Jarlsberg, Grana Padano, cream, salt and nutmeg. Stir to combine, then add pappardelle and mix well.
Transfer the mixture to a greased ovenproof casserole dish. Sprinkle grated Parmesan over the top of the casserole and bake in the oven until the top is golden brown, about 15 minutes. Serve immediately.
