Banana Bread

SERVES: 8

TOTAL TIME: 45 MINUTES

  • 3 ripe bananas, mashed

  • 2 tbsp golden syrup

  • ¼ cup caster sugar

  • 1 cup self-raising flour

  • Pinch salt

  • 1 banana, halved

  1. Preheat oven to 180ºC.

  2. Line and grease the base of a loaf tin.

  3. Combine mashed bananas and golden syrup in a bowl. Add caster sugar and mix well.

  4. Add egg, sifted flour and salt and mix until just combined.

  5. Pour mix into loaf tin and put in oven to cook.

  6. After 10 minutes remove from the oven and gently press the halved banana into the top of the loaf.

  7. Return to the oven and cook for a further 20 minutes or until a skewer inserted into the middle comes out clean.
