Broccoli & Parmigiano-Reggiano Pasta

SERVES: 4 • TOTAL TIME: 15 MINUTES

Ingredients:

  • 400 g orecchiette pasta

  • 3 heads of broccoli, chopped into small florets

  • Zest of one lemon

  • ½ lemon, juiced

  • ½ cup extra virgin olive oil

  • ½ cup Parmigiano-Reggiano

  • Pich of chilli flakes

  • Salt

  • Freshly ground black pepper

Directions:

  1. Cook past in salted boiling water.

  2. Two minutes before pasta is ready add chopped broccoli. Cook for 1 minute.

  3. Remove from stove, scoop out 1 cup of pasta water, then drain.

  4. Add lemon zest, lemon juice, extra virgin olive oil, parmesan cheese, chilli flakes, salt, pepper and half the reserved pasta water into empty pot and place on stove, medium high heat.

  5. Stir sauce vigorously until well combines. Use left over pasta water if necessary to ensure sauce has a nice consistency.

  6. Turn stove off and add pasta and broccoli and stir until combined.

  7. Serve with extra Parmigiano-Reggiano.
