
Capital Brewing Co. Rock Hopper IPA Pretzel Bites
Ingredients:
1 cup ROCK HOPPER WEST COAST IPA
2¼ tsp active dry yeast (1 packet)
3 tbsps caster sugar
2½ cups all–purpose flour
½ tsp salt
For Boiling the Pretzels:
10 cups water
⅔ cup baking soda
For Finishing:
¼ cup melted unsalted butter
Coarse sea salt or pretzel salt
Directions:
Warm up beer: Gently heat Rock Hopper in a saucepan. Remove from heat and add yeast. Let it froth for 5 minutes.
Dough Mixing: Combine sugar, flour, and salt in a large bowl. Stir in yeast mixture to form dough. Knead for 3–5 minutes.
First Rise: Let the dough rise in a greased bowl, covered, for 1 hour until doubled in size.
Oven Preheating: Preheat oven to 220°C and line a baking sheet.
Pretzel Bite Boiling: Boil water with baking soda. Divide dough and shape into 1–2 centimetre thick ropes. Cut into 1-inch pieces and boil in batches briefly.
Baking: Place boiled pretzel bites on baking sheet. Brush with butter and sprinkle salt. Bake for 12–15 minutes until golden brown.
Enjoy: Let cool slightly and serve warm with favourite sauce such as cheese or mustard.
