Capital Brewing Co. Rock Hopper IPA Pretzel Bites

Ingredients:

  • 1 cup ROCK HOPPER WEST COAST IPA

  • 2¼ tsp active dry yeast (1 packet)

  • 3 tbsps caster sugar

  • 2½ cups all–purpose flour

  • ½ tsp salt


For Boiling the Pretzels:

  • 10 cups water

  • ⅔ cup baking soda


For Finishing:

  • ¼ cup melted unsalted butter

  • Coarse sea salt or pretzel salt

Directions:

  1. Warm up beer: Gently heat Rock Hopper in a saucepan. Remove from heat and add yeast. Let it froth for 5 minutes.

  2. Dough Mixing: Combine sugar, flour, and salt in a large bowl. Stir in yeast mixture to form dough. Knead for 3–5 minutes.

  3. First Rise: Let the dough rise in a greased bowl, covered, for 1 hour until doubled in size.

  4. Oven Preheating: Preheat oven to 220°C and line a baking sheet.

  5. Pretzel Bite Boiling: Boil water with baking soda. Divide dough and shape into 1–2 centimetre thick ropes. Cut into 1-inch pieces and boil in batches briefly.

  6. Baking: Place boiled pretzel bites on baking sheet. Brush with butter and sprinkle salt. Bake for 12–15 minutes until golden brown.

  7. Enjoy: Let cool slightly and serve warm with favourite sauce such as cheese or mustard.
