Capsicum Eggs
SERVES: 4 • TOTAL TIME: 20 MINUTES
Ingredients:
2 large capsicums
4 tbsp olive oil
8 large eggs
Salt & pepper
2 tbsp fresh parsley, finely chopped
Dried chilli flakes (optional)
Directions:
Preheat oven to 200°C (180°C fan-forced).
Using a knife to cut the tops off the capsicums and carefully remove the capsicum seeds from the inside of the capsicums. Slice capsicums into 1½ to 2cm rings (you'll need eight rings).
Heat the olive oil in a large non-stick ovenproof pan over medium heat. Add capsicum and cook for 2 mins on one side and they have started to brown.
Remove pan from stove. Turn capsicum rings over and crack an egg into the the middle of each ring. Season with salt and pepper
Place pan into the oven and cook for 6-8 mins or until eggs have cooked (egg whites have set and egg yolks are slightly runny.
Remove from oven, sprinkle with parsley and dried chilli flakes (optional). Enjoy.
