Cherry Cranberry Christmas Pops

MAKES: 6 • TOTAL TIME: 8 HOURS (INCLUDING FREEZING TIME)

Ingredients:

  • Popsicle moulds

  • Ice cream sticks

  • 1 ½ cups fresh or frozen cherries, pitted

  • ½ cup cranberry juice

  • ½ cup coconut milk

  • ¼ tsp vanilla extract

  • 1 tbsp caster sugar

Directions:

  1. Combine cherries and cranberry juice in a blender and blend until smooth.

  2. Pour into moulds, only filling to two-thirds of the capacity. Insert ice cream sticks and place in freezer for 4 hours or until set.

  3. Add coconut milk, vanilla and sugar to a small jug and mix with a spoon until combined.

  4. Pour mixture into each mould and return to the freezer for a further 4 hours, or until set.
