Chia & Coconut Cups

SERVES: 4 • TOTAL TIME: 5 MINUTES + 3 HOURS REFRIGERATION

Ingredients:

  • ½ cup shredded coconut

  • ½ cup chia seeds

  • 1 ½ cups coconut milk

  • 1 cup coconut water

  • 2 tsp vanilla extract

  • ½ tsp salt

  • ⅓ cup strawberries

  • ⅓ cup raspberries

  • ⅓ cup blueberries

  • ½ cup granola

Directions:

  1. In a bowl add coconut, chia seeds, coconut milk, coconut water, vanilla and salt. Stir until well combined.

  2. Place in fridge for at least 3 hours, ideally overnight.

  3. To serve, divide mixture among 4 glasses and top with berries and granola.
