Chia & Coconut Cups
SERVES: 4 • TOTAL TIME: 5 MINUTES + 3 HOURS REFRIGERATION
Ingredients:
½ cup shredded coconut
½ cup chia seeds
1 ½ cups coconut milk
1 cup coconut water
2 tsp vanilla extract
½ tsp salt
⅓ cup strawberries
⅓ cup raspberries
⅓ cup blueberries
½ cup granola
Directions:
In a bowl add coconut, chia seeds, coconut milk, coconut water, vanilla and salt. Stir until well combined.
Place in fridge for at least 3 hours, ideally overnight.
To serve, divide mixture among 4 glasses and top with berries and granola.
