Christmas Granola
SERVES: 2 • TOTAL TIME: 30 MINUTES
Ingredients:
2 cups rolled oats
1 ½ tsp ground ginger
2 tsp cinnamon
¼ tsp all spice
Pinch of nutmeg
¼ cup coconut oil, melted
¼ cup maple syrup
1 tbsp molasses
½ tsp vanilla extract
1/3 cup chocolate chips
Pinch of sea salt
Directions:
Preheat oven to 180˚C.
Line a baking tray with baking paper and set aside.
Place oats, ginger, cinnamon, all spice, and nutmeg together in a large bowl.
Microwave coconut oil in short bursts until it is melted, then combine with maple syrup, molasses, and vanilla. Pour over the oats and spices and stir.
Spread granola mixture evenly over baking tray and cook for 20 minutes. Remove from oven and sprinkle with salt and set aside to cool. When cool, add chocolate chips and mix through the granola.
Divide granola between jars or containers of your choice.
This granola will keep for 3+ weeks in an airtight container in the pantry.
