Citrus Salad

SERVES: 6 • TOTAL TIME: 15 MINUTES

Ingredients:

  • ¼ cup olive oil

  • 2 tbsp red wine vinegar

  • 1 tbsp honey

  • 2 medium oranges, peeled and cut into 1 centimetre rounds

  • 2 medium pink grapefruit, peeled and cut into 1 cm rounds

  • 3 medium blood oranges, peeled and cut into 1 cm rounds

  • ½ cup pomegranate arils

Directions:

  1. Whisk together olive oil, red wine vinegar and honey. Taste and season with salt and pepper if desired.

  2. Arrange oranges and grapefruit on a plate.

  3. Drizzle over the vinaigrette and garnish with pomegranate arils.

  4. Serve immediately.
