Coriander Lime Coleslaw
SERVES: 6 • TOTAL TIME: 15 MINUTES
Ingredients:
1 ½ cups shredded green cabbage
1 ½ cups shredded purple cabbage
1 cup shredded carrot
½ cup chopped coriander
½ cup sliced spring onions
For the Dressing:
½ cup olive oil
Juice of 1 lime
1 tbsp honey
1 garlic clove, minced
¼ tsp red pepper flakes
Salt to taste
Directions:
Combine coleslaw ingredients in a large bowl.
In a small bowl whisk together the dressing ingredients.
Pour as much dressing over the coleslaw as desired.
Toss the coleslaw and dressing together.
Note:
This coleslaw can be made in advance and refrigerated until ready to serve.
