Creamy Avocado Spaghetti

SERVES: 4

TOTAL TIME: 20 MINUTES

  • 500 g Spaghetti

  • 2 ripe avocados

  • 50 g basil leaves

  • 1 lemon, juice and zest

  • 2 tbsp extra virgin olive oil

  • 2 garlic cloves

  • 1 tsp salt

  • ½ tsp pepper

  • Parmesan cheese, to serve

  1. Cook your pasta according to the package instructions.

  2. Once cooked, drain pasta (reserving the pasta water) and place pasta back into pot.

  3. For the avocado sauce, add avocado into a bowl and mash until smooth. Add basil leaves, lemon juice, lemon zest, olive oil, garlic, salt and pepper into the bowl and mix well. Add aproximately half to one cup of reserved pasta water to the sauce, a quarter of a cup at a time, until the sauce has thinned to desired consistency.

  4. Add sauce to pasta and and mix well. Serve imediately topped with parmesan cheese.
