Creamy Mashed Potato

SERVES: 4 ( AS SIDE) • TOTAL TIME: 25 MINUTES

Ingredients:

  • 900g potatoes

  • ½ tbsp salt

  • 30g butter

  • ½ cup light cream

  • Salt & pepper

  • Fresh thyme (optional)

Directions:

  1. Peel potatoes and rinse in cold water. Cut potatoes in half, or quarters if very large, then place in a large pot.

  2. Cover with cold water and add salt. Bring to a boil and cook partially covered until easily pierced with a knife (about 10–15 minutes depending on the size of the potatoes).

  3. Drain well and return potatoes to pan. Mash over heat for 1 minute for potatoes to thoroughly dry.

  4. Remove from heat and add butter. Mash until smooth. Using a wooden spoon, beat in cream (if necessary add extra cream or milk to desired consistency).

  5. Season with salt and pepper to taste and sprinkle with fresh thyme to serve.
