Drunken Sparkling Strawberries
SERVES: 8 • TOTAL TIME: 5 MINUTES + OVERNIGHT TO INFUSE + 30 MINUTES IF DECORATING
Ingredients:
1kg strawberries
750mL dry sparkling wine
½ cup caster sugar
Decorations - Optional:
200g White cooking chocolate, melted
200g Dark 70% cooking chocolate, melted
Edible gold leaf, gold spray, or gold shimmer
Directions:
Wash and hull strawberries and pat dry with paper towel.
Add strawberries to a large bowl and cover with sparkling wine. Cover and refrigerate for at least 4 hours, or overnight.
Strain strawberries through a colander, reserving the juices (see our tips) and, if omitting the decorations, sprinkle with sugar and serve.
Alternatively, pat the strawberries dry and place on skewers. Brush melted chocolate on the strawberries and embellish with edible gold decorations.
Allow to set before arranging into a bouquet.
