TOTAL TIME: 1 HOUR 10 MINUTES
1 ½ cups plain flour
¾ tsp baking powder
⅔ cup Caster sugar
⅓ cup milk
¼ cup extra virgin olive oil
¼ cup butter, melted
2 tsp orange zest
1 tsp vanilla bean paste
2 cups green grapes
Icing sugar, for dusting
Preheat oven to 180ºC. Grease a 23 cm springform cake tin and set aside.
In a bowl, mix together the flour and baking powder.
In a separate bowl, beat together the eggs and sugar using an electric mixer, until well combined and thick (approximately 3 to 4 minutes). Next add milk, oil, butter, orange zest and vanilla bean paste until well combined.
Fold in flour mixture, until just combined, then add green grapes and mix slightly.
Pour the mixture into the cake tin and bake in the oven until a skewer inserted into the cake center comes out clean, approximately 50 to 60 minutes.
Let the cake cool in the tin for 10 minutes before removing from the tin.
Once the cake has completely cooled, dust with icining sugar and serve.
