Green Olive Tapenade
SERVES: 10
TOTAL TIME: 5 MINUTES
550 g pitted green olives
3 cloves garlic
¼ cup capers, drained
6 anchovies, drained
2 tbsp finely grated lemon zest
3 tbsp lemon juice
¼ cup olive oil
½ cup flat leaf parsley leaves
Salt
Freshly ground black pepper
Add all ingredients to a food processor and blitz.
Taste and season as required.
Serve with crackers or crusty baguette slices.
