Green Olive Tapenade

SERVES: 10 • TOTAL TIME: 5 MINUTES

Ingredients:

  • 550g pitted green olives

  • 3 cloves garlic

  • ¼ cup capers, drained

  • 6 anchovies, drained

  • 2 tbsp finely grated lemon zest

  • 3 tbsp lemon juice

  • ¼ cup olive oil

  • ½ cup flat leaf parsley leaves

  • Salt

  • Freshly ground black pepper

Directions:

  1. Add all ingredients to a food processor and blitz.

  2. Taste and season as required.

  3. Serve with crackers or crusty baguette slices.
