Grilled Zucchini with Feta Cheese

SERVES: 4 • TOTAL TIME: 20 MINUTES

Ingredients:

  • 4 small zucchini

  • Extra virgin olive oil

  • Salt & pepper

  • 100 g Feta Cheese

  • Mint and parsley leaves, chopped

  • ½ a lemon

  • Pepita seeds or pomegranate seeds, to garnish

Directions:

  1. Trim the ends of the zucchini and then cut each zucchini into quarters lengthwise.

  2. Place zucchini quarters into a dish, add salt, pepper, and olive oil (about 2 tablespoons). Toss well until evenly coated.

  3. Heat BBQ or grill pan over medium high heat.

  4. Once hot, place zucchini on grill and cook for 3 minutes on each side (both flesh sides and skin side). Zucchini is cooked when you can pierce it with a fork.

  5. Arrange grilled zucchini on a serving plate. Sprinkle with Feta cheese and herbs, drizzle with a squeeze of lemon juice and olive oil and garnish with pepita seeds or pomegranate seeds.
