Herb Infused Roasted Mushrooms & Shallots

SERVES: 6 • TOTAL TIME: 40 MINUTES

Ingredients:

  • 6 shallots

  • 100 mL olive oil, divided

  • 1 kg mushrooms (a mixture of different varieties)

  • Salt

  • Freshly ground black pepper

  • 2 cloves garlic, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1 tbsp chopped tarragon

  • 1 tbsp chopped sage

Directions:

  1. Preheat oven to 220ºC.

  2. Peel shallots, cut in half and place on a baking tray. Drizzle with a 10 mL olive oil.

  3. Arrange mushrooms on a second baking tray and drizzle with 20 mL olive oil. Season and place both trays in the oven for 30 minutes.

  4. Remove from oven and set aside.

  5. Make dressing by combining 70 mL olive oil with garlic, lemon zest and juice and herbs.

  6. Separate shallot pieces and place on a platter with mushrooms. Drizzle with dressing and serve immediately.
