Herbed Turkey Buffe

SERVES: 10 • TOTAL TIME: 3 HOURS 15 MINUTES

Ingredients:

  • 4kg turkey buffe

  • 2 large brown onions, thickly sliced

  • 100g salted butter, softened

  • 1 tbsp flat leaf parsley, finely chopped

  • 1 tbsp fresh sage leaves, finely chopped

  • 1 tbsp fresh thyme leaves, finely chopped

  • 3 cloves garlic, crushed

  • Salt

  • Freshly ground black pepper

Directions:

  1. Preheat oven to 190ËšC.

  2. Lay onions in base of a roasting pan.

  3. Combine butter, herbs and garlic in a bowl and season with salt and pepper.

  4. Use paper towel to pat turkey dry, then use your fingers to create a pocket between the turkey skin and meat. Work half the butter into the pocket and massage it into the meat.

  5. Place turkey in roasting panon top of the onions. Reserve 2 tablespoons of the remaining butter mixture and rub the rest over the outside of the skin. Cover loosely with foil and roast for 2½ hours, then increasethe oven temperature to 220˚C. Remove foil and brush with reserved butter, then cook, uncovered for 30 minutes or until the turkey is golden and cooked through and the internal temperature reaches 70˚C.

  6. Remove from oven, cover loosely with foil and allow to rest for at least 30 minutes.
