Iceberg Wedge Salad with Blue Cheese Dressing
SERVES: 4 • TOTAL TIME: 15 MINUTES
Ingredients:
For the Salad:
1 iceberg lettuce
4 rashers middle bacon, cooked, cooled and chopped
250g cherry tomatoes, halved
4 hard-boiled eggs, cooled and chopped
Salt
Freshly ground black pepper
For the Blue Cheese Dressing:
1 cup sour cream
½ cup mayonnaise
3 tbsp milk
3 tsp red wine vinegar
1 clove garlic, minced
120g blue cheese
4 chives, chopped, plus additional for garnish
Directions:
Remove outer leaves from the iceberg lettuce, wash and cut into quarters.
Prepare Blue Cheese Dressing by adding all ingredients to a mixing bowl and stirring to combine.
Place lettuce wedges onto serving plates and drizzle with Blue Cheese Dressing. Crumble over cooled bacon, tomatoes, and eggs. Garnish with chopped chives, season with salt and pepper and serve.
