Lamb Steak Tray Bake
SERVES: 4 • TOTAL TIME: 1 HOUR
Ingredients:
4 tbsp olive oil, divided
1 tbsp lemon juice
2 garlic cloves, crushed
1 tsp dried mint
4 lamb leg steaks
Salt and pepper
500 g new potatoes, sliced
500 g broad beans, skinned if you have time
8 shallots, halved
2 zucchini, cut into chunks
75 mL white wine
Directions:
Preheat oven to 200ºC.
Make a marinade for the lamb steaks by mixing 2 tablespoons of olive oil, lemon juice, garlic and mint in a bowl. Season with salt and pepper and add lamb. Rub mixture into the lamb steaks. Set aside.
Add potatoes, zucchini, shallots and beans to a large roasting pan. Drizzle with remaining 2 tablespoons of olive oil and wine. Cover pan with foil and cook in oven for 30 minutes. Remove foil and cook for a further 15 minutes.
Increase heat to 220ºC. Place lamb steaks over the veggies and return to the oven for 10-15 minutes or until the lamb is cooked to your liking. Remove from oven, stand for 5 minutes and then serve
