Lemon, Garlic & Parmesan Roasted Asparagus
Total Time: 25 Minutes
3 bunches asparagus
2 tbsp olive oil
1 lemon, zested and then sliced
3 cloves garlic, sliced
Salt and pepper to taste
2 tbsp parmesan cheese, finely grated
Preheat oven to 210ºC.
Line a baking tray with baking paper.
Trim asparagus to remove woody ends.
Combine olive oil, garlic, lemon zest and salt and pepper in a large bowl. Add asparagus and toss to coat well. Tip contents of bowl on to baking tray and arrange asparagus in a single layer.
Roast asparagus in oven for 15 to 20 minutes or until it is tender.
Remove from oven, place on a serving platter and sprinkle with grated parmesan cheese to serve.
