Lemon, Garlic & Parmesan Roasted Asparagus

SERVES: 8 • Total Time: 25 Minutes

Ingredients:

  • 3 bunches asparagus

  • 2 tbsp olive oil

  • 1 lemon, zested and then sliced

  • 3 cloves garlic, sliced

  • Salt and pepper to taste

  • 2 tbsp parmesan cheese, finely grated

Directions:

  1. Preheat oven to 210ºC.

  2. Line a baking tray with baking paper.

  3. Trim asparagus to remove woody ends.

  4. Combine olive oil, garlic, lemon zest and salt and pepper in a large bowl. Add asparagus and toss to coat well. Tip contents of bowl on to baking tray and arrange asparagus in a single layer.

  5. Roast asparagus in oven for 15 to 20 minutes or until it is tender.

  6. Remove from oven, place on a serving platter and sprinkle with grated parmesan cheese to serve
