Lemony Roasted Chicken Thighs

SERVES: 4 • TOTAL TIME: 40 MINUTES

Ingredients:

  • 8 bone-in, skin-on chicken thighs

  • Juice of one lemon

  • 1 tbsp wholegrain mustard

  • 2 tbsp honey

  • ½ cup extra virgin olive oil

  • Salt and pepper

Directions:

  1. Combine chicken thighs with lemon juice, olive oil and salt and pepper in a large bowl and marinate for at least one hour (or overnight).

  2. Preheat oven to 190˚C and roast the chicken skin-side down I an oiled roasting pan for 20-25 minutes. Turn and cook for another 10 minutes.

  3. Stir together the wholegrain mustard with the honey and brush onto the chicken before placing under the grill for 4-5 minutes (or until the mustard honey glaze is golden).
