Lemony Roasted Chicken Thighs
SERVES: 4 • TOTAL TIME: 40 MINUTES
Ingredients:
8 bone-in, skin-on chicken thighs
Juice of one lemon
1 tbsp wholegrain mustard
2 tbsp honey
½ cup extra virgin olive oil
Salt and pepper
Directions:
Combine chicken thighs with lemon juice, olive oil and salt and pepper in a large bowl and marinate for at least one hour (or overnight).
Preheat oven to 190˚C and roast the chicken skin-side down I an oiled roasting pan for 20-25 minutes. Turn and cook for another 10 minutes.
Stir together the wholegrain mustard with the honey and brush onto the chicken before placing under the grill for 4-5 minutes (or until the mustard honey glaze is golden).
