Light & Fluffy Scones

MAKES: 8 • TOTAL TIME: 20 MINUTES

Ingredients:

  • 1 cup lemonade

  • 1 cup cream

  • 3 cups self-raising flour

  • 1 egg

Directions:

  1. Preheat oven to 220˚C.

  2. Add lemonade and cream to flour and mix to form a soft dough.

  3. Turn out onto a floured surface and roll dough to a 2 centimetre thickness.

  4. Using a floured cutter, cut out scones and place close together on a baking tray.

  5. Brush with beaten egg and bake for 10 to 15 minutes.

  6. Serve with jam and cream.
