Mary's Kouzina Oktapodi Stin Skara (Grilled Octopus)
Ingredients:
1 Octopus approximately 1kg in size
2 soft kiwi fruits, skins removed and grated
For the Octopus Marinade:
¼ cup extra virgin olive oil
3 tablespoons red wine vinegar
Juice of ½ a lemon
½ tsp dried oregano
1 clove garlic, grated
Salt and pepper to taste
Directions:
Combine cleaned octopus with grated kiwi fruit and massage into the octopus. Allow the kiwi fruit to tenderise the octopus for no longer than 3 hours. Rinse off kiwi well.
In a small bowl combine marinade ingredients and whisk well to emulsify.
Transfer octopus onto hot grill or barbecue for approximately 5 minutes turning occasionally.
Place grilled octopus into the marinade whilst it’s still hot.
Enjoy with an extra squeeze of lemon.
