Meredith Dairy Goat Cheese Pumpkin Dip

SERVES: 4

TOTAL TIME: 10 MINUTES

  • 1 ½ cups of roasted pumpkin (or 1 cup or pumpkin puree)

  • ¼ cup of sun-dried tomatoes

  • 320 g jar of Meredith Dairy Marinated Goat Cheese

  • 4 tbsp of oil from the jar of Marinated Goat Cheese

  • sesame seeds, parsley or paprika powder to decorate

  • salt and pepper

  1. Blitz sun-dried tomatoes, pumpkin, goat cheese, salt and pepper and oil together in a blender until smooth. Feel free to add oil to get your desired consistency.

  2. Decorate with fresh herbs, sesame seeds or spice like paprika, and serve with crackers, flat bread, veggie sticks or toast.
