Meredith Dairy Summer Salad with Goat Cheese

SERVES: 4 • TOTAL TIME: 10 MINUTES

Ingredients:

  • 200 g of mix leaf salad

  • 200 g cherry tomatoes

  • ½ cucumber

  • ½ red onion

  • 1 avocado

  • Small bunch of basil leaves or herb of your choice

  • 320 g jar of Meredith Dairy Marinated Goat Cheese

  • 3 tbsp of balsamic glaze

  • 3 tbsp of infused oil from Meredith Dairy Marinated Goat Cheese jar

  • ¼ cup of crushed pistachios

  • Salt and pepper

Directions:

  1. Halve cherry tomatoes. Rinse and dry salad mix. Slice red onion into thin half rings. Cut avocado in half and slice into thin slices. Cut the cucumber in half lengthwise, and with a spoon, scrape out the seeds. Cut into slices.

  2. Assemble the salad onto a wide flat serving platter. Crumble on top Meredith Dairy Goat Cheese and crushed pistachios. Drizzle with balsamic glaze and infused oil from the jar. Season with salt and pepper.
