Ortiz Pan Con Tomate (Spanish Tomato Bread)

SERVES: 2 • TOTAL TIME: 15 MINUTES

Ingredients:

  • 4 slices of Sourdough bread

  • 1 garlic clove

  • 2 ripe tomatoes

  • Salt

  • 1 clove of minced garlic

  • Olive oil

  • Pinch of dried chili flakes

  • 4-8 Ortiz Anchovies or Sardines

Directions:

  1. Preheat a grill or grill pan to medium heat.

  2. Slice the Sourdough bread into 4 even slices.

  3. Place the slices of bread on the grill or grill pan and cook for 2-3 minutes on each side, or until nicely toasted.

  4. Take the garlic clove and rub it over one side of each piece of toasted bread. This will infuse the bread with a subtle garlic flavor.

  5. Using a box grater, grate the ripe tomato into a bowl, discarding the skin.

  6. Add a pinch of salt, garlic, a drizzle of olive oil, and a pinch of dried chili flakes to the grated tomato in the bowl. Mix well to combine all the flavors.

  7. Spread the tomato mixture generously onto the garlic-rubbed side of each warm toasted bread slice.

  8. Lay 1 or 2 Ortiz Anchovies or Sardines on top of each tomato and enjoy!
