Ortiz Pan Con Tomate (Spanish Tomato Bread)
SERVES: 2 • TOTAL TIME: 15 MINUTES
Ingredients:
4 slices of Sourdough bread
1 garlic clove
2 ripe tomatoes
Salt
1 clove of minced garlic
Olive oil
Pinch of dried chili flakes
4-8 Ortiz Anchovies or Sardines
Directions:
Preheat a grill or grill pan to medium heat.
Slice the Sourdough bread into 4 even slices.
Place the slices of bread on the grill or grill pan and cook for 2-3 minutes on each side, or until nicely toasted.
Take the garlic clove and rub it over one side of each piece of toasted bread. This will infuse the bread with a subtle garlic flavor.
Using a box grater, grate the ripe tomato into a bowl, discarding the skin.
Add a pinch of salt, garlic, a drizzle of olive oil, and a pinch of dried chili flakes to the grated tomato in the bowl. Mix well to combine all the flavors.
Spread the tomato mixture generously onto the garlic-rubbed side of each warm toasted bread slice.
Lay 1 or 2 Ortiz Anchovies or Sardines on top of each tomato and enjoy!
