Oysters with Gin, Lime & Chilli

SERVES: 4 • TOTAL TIME: 10 MINUTES

Ingredients:

  • 1 tbsp lime juice

  • 1 tsp lime zest

  • 60mL gin, chilled

  • ½ tsp freshly grated ginger

  • 1 tsp mirin

  • 1 tsp caster sugar

  • ½ red chilli, finely diced

  • 24 oysters

Directions:

  1. Add lime juice and zest, gin, ginger, mirin, sugar and chilli to a small bowl and whisk to combine.

  2. Spoon mixture over oysters immediately before serving.
