Pork Chops with Pears
SERVES: 4 • TOTAL TIME: 35 MINUTES
Ingredients:
4 tbsp olive oil
4 pork chops
salt and pepper
3 ripe pears, cored and cut in half
3 sprigs rosemary
½ cup chicken stock
½ cup apple cider
2 tbsp honey
Directions:
Preheat oven to 180ºC.
Place an oven proof pan on medium heat and add 2 tablespoons olive oil. Add pears and rosemary and cook until pears are tender, approximately 10 minutes. Remove from pan and set aside.
Return the same pan to medium high heat and add the remaining olive oil. Season pork chops with generously with salt and pepper and place in pan. Brown pork chops on both sides, approximately 3 minutes.
Add chicken stock, apple cider and honey to pan and bring to a boil. Return pears and rosemary to the pan and transfer to the oven and bake until chops are cooked through and pears have softened, 10 to 15 minutes.
Stand for 5 minutes before serving with mashed potato.
