Salad of Cabbage, Apple & Almond
SERVES: 4 • TOTAL TIME: 10 MINUTES
Ingredients:
For the Salad:
100 g red cabbage
100 g green cabbage
2 apples
1 tbsp lemon juice
50 g almonds
50 g snow pea sprouts
For the Dressing:
2 tbsp cranberry juice
1 tbsp balsamic vinegar
2 tsp finely grated fresh ginger
1 tbsp gluten free soy sauce
1 tsp honey
3 tbsp olive oil
Salt and freshly ground black pepper
Directions:
Finely slice red and green cabbage and place in a large bowl.
Core apples and finely slice, then pour over lemon juice to stop apples browning and add them to the bowl, along with almonds and snow pea sprouts.
Make the dressing by whisking all ingredients together and season to taste.
When ready to serve, pour over dressing and toss salad.
