Sausage & Vegetable Tray Bake

SERVES: 4 • TOTAL TIME: 1 HOUR

Ingredients:

  • 8 sausages, cut into bite-sized pieces

  • 2 potatoes, peeled and chopped into bite-sized pieces

  • 2 carrots, peeled and chopped into bite-sized pieces

  • 1 small sweet potato, peeled and chopped into bite-sized pieces

  • 1 bunch asparagus, woody ends removed, chopped

  • 6 Brussels sprouts, halved

  • ¼ red capsicum, chopped into bite-sized pieces

  • ¼ yellow capsicum, chopped into bite-sized pieces

  • Handful of button mushrooms, chopped into bite-sized pieces

  • 2-3 tbsp olive oil

  • Salt

  • Freshly ground black pepper

  • ¼ cup Worcestershire sauce

Directions:

  1. Preheat oven to 180ºC.

  2. Add sausages and vegetables to a baking tray with the olive oil. Toss to coat all ingredients. Season with salt and pepper, then roast in the oven for 40 minutes, or until vegetables are cooked.

  3. Remove from oven and drizzle with Worcestershire Sauce. Toss again to distribute the sauce and then serve immediately.
