Strawberry, Rocket & Halloumi Salad
SERVES: 2 • TOTAL TIME: 20 MINUTES
Ingredients:
125g halloumi, thinly sliced
Extra virgin olive oil spray
40g rocket leaves
¼ cup basil leaves
1 tomato, cut into wedges
250g strawberries, washed, hulled & halved
Dressing:
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze
Pinch of salt
Punch of dried oregano
Directions:
Heat frying pan on a medium high heat. Spray halloumi slices on both sides with extra virgin olive oil spray and cook in pan until golden brown on both sides. Set aside.
Arrange rocket leaves, basil leaves, tomato wedges, strawberries and halloumi on two serving plates.
Place the extra virgin olive oil, balsamic glaze, salt and dried oregano into a jar. Place the lid on tightly and shake well to combine.
Pour dressing over salad and serve immediately. Enjoy!!
