Sweet Corn, Peaches & Cherry Salad with Creamy Goat Cheese
TOTAL TIME: 20 MINUTES
1 corn cob
1 small peach
1 cup cherries
1 small shallot
6 cups of your preferred greens (lettuce, spinach, kale etc)
2 tbsp olive oil
1 lime, juiced
salt and pepper to taste
60 g soft goats cheese
Boil or grill 1 corn cob. Once cooked, remove the kernels from the cob with a knife.
Slice the peach, cut the cherries in half and remove the pit, and slice the shallot.
In a large bowl, toss the preferred greens, corn, peaches, cherries and shallots with the olive oil and lime juice. Season with salt and pepper.
Plate the salad and add goat cheese just before serving.
