Three Blue Ducks Rissoles

SERVES: 4–6

Ingredients:

  • 1 kg prime beef mince

  • 200 g panko (or sourdough breadcrumbs)

  • 200 g currents

  • 150 g pine nuts, toasted

  • 4 eggs

  • 3 handfuls of flat-leaf parsley, leaves picked and roughly chopped

  • 1 large red onion, finely chopped

  • 2 tablespoons minced garlic

  • 75 ml kecap manis

  • 2 tablespoons chilli

  • 2 tablespoons smoked paprika

  • 1 tablespoon salt flakes

  • 2 teaspoons ground pepper

Directions:

  1. Preheat the barbecue grill on high.

  2. Mix all the ingredients in a large bowl until well combined.

  3. Roll the mix into rissoles of your preferred shape and size.

  4. Grill the rissoles for 3-5 minutes on each side, depending on how big you make them.

  5. Rest for 10 minutes covered with foil before serving.
