Three Blue Ducks Rissoles
SERVES: 4–6
Ingredients:
1 kg prime beef mince
200 g panko (or sourdough breadcrumbs)
200 g currents
150 g pine nuts, toasted
4 eggs
3 handfuls of flat-leaf parsley, leaves picked and roughly chopped
1 large red onion, finely chopped
2 tablespoons minced garlic
75 ml kecap manis
2 tablespoons chilli
2 tablespoons smoked paprika
1 tablespoon salt flakes
2 teaspoons ground pepper
Directions:
Preheat the barbecue grill on high.
Mix all the ingredients in a large bowl until well combined.
Roll the mix into rissoles of your preferred shape and size.
Grill the rissoles for 3-5 minutes on each side, depending on how big you make them.
Rest for 10 minutes covered with foil before serving.
