Ultimate Chocolate Fudge Cake

SERVES: 10 • TOTAL TIME: 1 HOUR

Ingredients:

  • 250 g self raising flour

  • 50 g cocoa powder

  • 250 g dark chocolate

  • 250 g brown sugar

  • 250 g unsalted butter, softened

  • 100 mL water

  • 4 large eggs

  • 1 tsp vanilla extract


For the Frosting:

  • 200 g icing sugar, sifted

  • 200 g unsalted butter, softened

  • 200 g dark chocolate, melted


For Decoration:

  • 50 g dark chocolate

Directions:

  1. Preheat oven to 180ºC.

  2. Grease and line two 20 centimetre spring form cake tins with baking paper.

  3. Add flour and cocoa to a bowl. In a saucepan, melt chocolate with sugar, butter and water and leave to cool.

  4. When cooled transfer to a mixing bowl and whisk in eggs one by one until combined, then add vanilla. Mix wet ingredients into dry.

  5. Pour batter into cake tins and bake for 30 minutes or until a skewer comes out clean. Remove cakes from oven and set aside to cool.
