Watermelon Greek Salad

SERVES: 4 • TOTAL TIME: 10 MINUTES

Ingredients:

  • 2 baby cos lettuce hearts, chopped in chuncks

  • ¼ seedless watermelon, diced

  • 3 baby Lebanese cucumbers, sliced

  • 250g baby tomatoes, halved

  • 1 small red onion, thinly sliced

  • 200g Greek feta, crumbled

  • 80g kalamata olives

  • ¼ cup mint leaves

  • ¼ cup flat-leaf parsley, chopped

  • 2 tbsp white wine vinegar

  • 3 tbsp extra virgin olive oil


Directions:

  1. On a serving dish place the lettuce.

  2. In a separate bowl, add place watermelon, cucumber, tomatoes and red onion and toss together. Add place on top of the lettuce.

  3. Top salad with feta, olives, parsley and mint.

  4. In a small bowl, whisk together the vinegar and olive oil well. Drizzle over the salad to serve.
