Watermelon Greek Salad
SERVES: 4 • TOTAL TIME: 10 MINUTES
Ingredients:
2 baby cos lettuce hearts, chopped in chuncks
¼ seedless watermelon, diced
3 baby Lebanese cucumbers, sliced
250g baby tomatoes, halved
1 small red onion, thinly sliced
200g Greek feta, crumbled
80g kalamata olives
¼ cup mint leaves
¼ cup flat-leaf parsley, chopped
2 tbsp white wine vinegar
3 tbsp extra virgin olive oil
Directions:
On a serving dish place the lettuce.
In a separate bowl, add place watermelon, cucumber, tomatoes and red onion and toss together. Add place on top of the lettuce.
Top salad with feta, olives, parsley and mint.
In a small bowl, whisk together the vinegar and olive oil well. Drizzle over the salad to serve.
