Yarrows Blueberry & Lemon Bread & Butter Pudding

SERVES: 4

Ingredients:

  • 450 g stale bread

  • 30 ml lemon curd

  • 1 cup fresh blueberries

  • 400 ml milk

  • 3 eggs

  • 2 tbsp sugar

  • 4 tbsp butter, softened

  • 2 tbsp toasted flaked almonds

  • 2 tbsp icing sugar

  • Vanilla ice cream

Directions:

  1. Preheat the oven to 180ºC. Grease oven proof dish.

  2. Slice bread then spread each slice with lemon curd and place in oven dish, lemon curd side down.

  3. Add blueberries between the slices and on top. Pour over the bread in the dish, making sure to cover all the bread.

  4. Melt butter and pour over the top of the pudding then bake in the oven for 45 to 50 minutes, or until pudding is golden and crunchy on top.

  5. Serve pudding warm. Sprinkle almonds and icing sugar on top and serve with ice cream...Enjoy!!
