TOTAL TIME: 50 MINUTES
375 g zucchini
3 rashers bacon
1 cup self-raising flour
1 cup grated cheddar cheese
½ cup oil
Salt and pepper
Preheat oven to 180°C (160°C fan-forced).
In a bowl, lightly beat eggs.
Next, grate zucchini coarsely and finely chop onion and bacon.
Add zucchini, onion, bacon, cheese, sifted flour and oil to bowl with eggs and combine.
Place mixture in baking dish and bake in the oven for 30 to 40 minutes or until browned.
NOTE: The zucchini may be combined or substitued with other vegetables.
